For such a long time, I had a love-hate relationship with brownie recipes. I would try recipes from tonnes of bakers and recipe books, but I just couldn't get it down. Often they were too gloopy or overcooked, and the post-bake mixture wiggle was not my friend.

But when I was a teenager, I started making my own brownie recipe. It came out of pure desperation for gooey chocolate brownies that didn't take too long to bake in the oven. Now, I have 3 brownie recipes!! That might seem a bit EXTRA, but it's totally worth being able to pick a recipe based on a craving.

What makes these caramel brownies so easy?

You're going to be amazed when you see that these are the easiest caramel brownies! And what makes them so simple, is that you don't have all the issues that you normally get with caramel.

You don't need to make the caramel sauce because it's already been done for you thanks to Cadbury Caramel Eggs. All you need to do is slice the milk chocolate caramel egg in half (or even smaller if you would rather spread out the caramel more).

Because the caramel isn't folded into the mixture, you don't need to keep your eye on the oven more than normal. With caramel, you'll have a more liquidy texture because caramel sets when it's cool - so unless you're a seasoned expert, it can be very difficult to know when the caramel brownies are cooked.

Tips for baking easy caramel brownies

  • Use golden granulated sugar: I used to always bake with your typical white granulated sugar so don't get me wrong, it's yummy. But when I tried out golden granulated sugar, I was blown away by how different the brownies tasted. The sugar adds a warmer, more caramelised flavour.

  • Microwave some of the ingredients: Using a microwave makes the mixing process easier but believe it or not, that's not the reason I do it. In fact, lightly warming the butter, sugar, cocoa powder and salt gives you the most amazing texture, making the brownie less cakey and more fudgy.

  • Check the oven temperature: Keeping your oven at a lower temperature means your brownies will bake evenly and you'll avoid having a burnt top or edges.

  • Keep an eye on baking time: Caramel makes brownies slightly more gooey in texture which is why it can be hard to know if they're cooked or not. If you've put the eggs caramel-side-up, this will be easier because you can just aim to avoid them when using a skewer to check if the brownies are cooked. But if you chose to spread the caramel eggs around, I have a solution for you! If you allowed the brownies to bake at 150 degrees celcius for 30 minutes, but a skewer still comes out dirty, try gently wobbling the brownie tin. This will help give you an idea of the interior texture, if there's a very slight or non-existent wobble, the brownies are ready.

  • Cool before cutting: One the most important things about baking brownies is patience. As much as you want a piece straight from the oven, please trust the process and wait for them to completely cool before cutting - this comes from experience of creating a messy disaster!

How to store caramel brownies

Learning the best storage solutions for caramel brownies is so important because it helps you keep them fresh for longer.

Tips for storing brownies:

  • Storing at room temperature: If you're planning to eat your brownies within a few days, I recommend storing them at room temperature in an airtight container out of direct sunlight.

  • Refrigerating your brownies: I wouldn't say that these brownies are the best for keeping in the fridge, because they can get quite hard with the addition of caramel. However, if you like them a bit more solid, it's definitely a great option.

  • Can I freeze caramel brownie? Of course! Once you have cut the brownie pieces, wrap each individual piece and then place them in a freezer bag or airtight container. When you're ready to eat them, unwrap the pieces you want and let them gradually come to room temperature.

Ingredients

  • 120g unsalted butter
  • 300g golden granulated sugar
  • 70g cocoa powder
  • Pinch of salt
  • 2 eggs
  • 150g plain flour
  • 6 Cadbury caramel eggs

How to make caramel brownies

  • Preheat the oven to 150ºc and line an 8 inch brownie tin with greaseproof paper.
  • In a microwavable bowl, measure out the butter (120g), sugar (300g), cocoa powder (70g)and pinch of salt. Place in the microwave at 30 second intervals, stirring between blast, until the butter is melted and the mixture is warm to touch, but not hot.
  • Leave the bowl to cool if need, and then break in 2 eggs and mix until combined.
  • Fold in then flour (150g), and then pour into your brownie tin.
  • Cut the 6 caramel eggs in half so you have 12 pieces, and then place them caramel-side-up on top of the brownie mixture. Alternatively, you can cut them into smaller chunks and fold them into the mixture.
  • Bake for 25-30 minutes, or until a skewer comes up mostly clean. Bear in mind that caramel can make a skewer look messy - see the tips below for this.
  • Allow to cool, and then cut into 16 squares, making the pieces 2 inches each. You can do this by cutting the brownie slab in half both ways, and then cutting the halves in half both ways.
