Now, let’s talk about how to make brownies that are on a whole other level of yum!

  • Use quality ingredients: Since brownies typically have a simple ingredient list, using good-quality cocoa powder can actually make a huge difference to the colour and flavour of your bake.

  • Don't overheat the batter: This recipe begins by combining some of the ingredients in the microwave, but it’s important to follow the 30-second-rule. Only warm the ingredients at 30-second intervals, stirring at each break so that you’re only heating the mixture until the butter is melted and the ingredients are coming together.

  • Properly measure ingredients: This is your number one baking rule! Make sure you accurately measure your ingredients using a scale. Baking is a science, which means that changing the ingredients’ quantity can greatly impact the outcome.

  • Line your pan: I get it, you might want to skip the parchment paper because you just want to put the brownies in the oven so you can eat them quicker… but you’ll regret it later when you can’t get the brownies out in one piece. Line your baking pan with parchment paper, leaving some overhang on the sides. This will make it easier to lift the brownies out of the pan before cutting.

  • Use brown sugar and granulated sugar: If you’re only using one sugar, then make it granulated sugar. But I can’t recommend adding brown sugar enough - it gives these brownies to a heavenly depth of flavour, fudge-like texture and rich colour.

  • Don't overbake: Brownies continue to cook slightly after you take them out of the oven due to residual heat. For this recipe, it’s better to stick to the timings if you’re following all the instructions, and you want a toothpick to come out with a few crumbs rather than being completely clean or drenched with brownie batter.

  • Add mix-ins: Get creative with your brownies by adding nuts, chocolate chips, swirls of caramel or peanut butter, or candies like Mint Aero bars for extra flavor and texture.

  • Let them cool completely: Allow the brownies to cool completely before lifting them out and cutting them. This is important for allowing them to set properly and makes for cleaner cuts. Lifting warm brownies from the tin is difficult because they’re soft and unable to hold they’re shape, so it’s likely the brownies will fall apart.

  • Store brownies in an airtight container: You can keep these brownies at room temperature for a week, or if you can resist them, you can also freeze them for longer storage.

 

Mint Aero Brownies!

Ingredients

  • 140g unsalted butter
  • 250g golden granulated sugar
  • 50g light brown sugar
  • 75g cocoa powder
  • Pinch of salt
  • 2 eggs
  • 60g plain flour
  • 2 Large Mint Aero bars
  • Mint Aero Bubbles

Method:

  • Preheat the oven to 150C and grease an 8" square tin with greaseproof paper/non-stick paper.
  • Measure out the butter (140g), sugar (300g), cocoa (75g), and salt into a bowl. Put the bowl in the microwave at 30-second intervals, stirring at each break, until the mixture has melted and slightly warmed.
  • Leave to cool and then mix in 2 eggs.
  • Fold in the flour (60g) until fully combined.
  • Pour into your lined tin and press the large Mint Aero chocolate bars into the brownie mixture, covering it with the brownie batter. Then sprinkle some Mint Aero bubbles on top.
  • Bake for 30 minutes and leave to cool fully before cutting into. I know it can be hard to resist them, but letting them cool is so worth it so you can reap the rewards of a fully developed fudge-like texture.
