Getting the perfect pancake recipe is so important to me. And I’m talking about fluffy pancakes, of course! I want them to be simple and easy to make, incredibly fluffy and so tasty.

Tips for perfecting fluffy pancakes

  1. Choose the right temperature: Working on an oven hob can be tricky business if you’re looking to make something precise. Essentially, you want your frying pan to cook the pancakes gently so aiming for a medium heat works best. Don’t go getting impatient making your pancakes cook quicker with a high heat because they’ll have browned or burnt on the outside whilst remaining uncooked inside.

  2. Be gentle on the butter: It can be easy getting excited when adding the butter in the pan, but you only need a small amount to ensure your pancakes don’t get stuck. However, if it looks like there’s too much butter swimming in the pan when the butter is melted, you can very carefully dab some off of the pan with kitchen roll (definitely a job for the adults).

  3. Know when the pancakes are ready: As long as your cooking pancakes at a medium heat, they’ll gradually cook inside while becoming golden brown on the outside. This should take a few minutes on each side. However, one secret tip is to watch the pancakes as they cook because the side that is raw will generate little air bubbles. Once these air bubbles pop, you’ll know it’s time to flip the pancake and cook the other side.

#MYTH The first pancake is the worst of the lot.

I’ve got some good news for you. The first one doesn’t have to be bad, and you won’t need to waste an entire pancake if you learn these simple things about making pancakes.

  1. Let your frying pan evenly heat before pouring in the batter. The middle of the frying pan usually gets hottest first so it’s likely that your pancake isn’t cooking evenly or correctly.

  2. Using too much butter or oil will make the pancakes greasy. Ever thought your pancake looked oily or greasy after being cooked? It’s because there is too much liquid in the pan before adding any pancake batter so the pancake is getting boiled rather than cooked.

  3. Spread the butter or oil evenly across the pan. When melting, the butter/oil will create little individual puddles meaning that there’s too much oil in specific areas of the frying pan. Usually the second pancake goes better, because the first one soaked up the puddles and leaves an even layer of oil. Make the first one better by carefully wiping up the excess oil with some kitchen roll so that a thin layer of oil is left behind.

Decorating fluffy pancakes can become a really fun part of Pancake Day. You could set up a platter of topping suggestions for your family and friends to create their own personalised pancake haven.

Ingredients

For the pancakes

  • 3 eggs
  • 1/2 tsp salt
  • 100ml Carnation Condensed Milk
  • 100g plain flour
  • 1tsp baking powder

To decorate

  • Carnation Chocolate Drizzle - perfect with berries, chocolate chips or whipped cream
  • Carnation Caramel Drizzle - perfect with bananas and biscoff biscuits
  • Carnation Condensed Milk Drizzle - perfect with cherries and almonds

Method

  • Separate the egg yolks and egg whites into two different bowls.
  • Use a whisk or stand mixer with a whisk attachment to froth up the egg whites (3) and salt (1/2 tsp). You want the egg whites to form stiff peaks and hold their shape when the whisk is lifted out. This usually takes about 5 minutes if I’m using my stand mixer on high speed.
  • In a separate bowl, stir the condensed milk (100ml) into the yolks, and then sieve in the flour (100g) and baking powder (1tsp), mixing until combined.
  • Fold the egg whites into the pancake batter so they remain light and fluffy.
  • Gently heat a frying pan with a small knob of butter. Once the butter has melted, pour in some of the batter and cook for a few minutes on each side.
  • Decorate your pancakes with one of Carnation’s delicious Drizzle products.
